Thought I’d share what I ate for lunch today…
1/4 of large Sweet Vidalia Onion - sliced long ways to make long stick slices.
Nice Bunch of Fresh Baby Spinach Leaves
Peppadews - (Chopped)
Goat Cheese Crumbles
In large pan - carmelize the onions in olive oil for 15 minutes on low.
Add fresh spinach and fold ingredients together. Add chopped peppadew, fold again. Sautee for 2 minutes tops.
Place in dish…sprinkle with goat cheese. Done.
I posted this without a pic - because I ate the plate too damn fast and realized after the fact. Whooops.
